Ingredients
For one large chocolate bar (approx. 4 servings), you will need:
- Chocolate base: 300 g high-quality couverture chocolate (dark, milk, or white chocolate – or a mix like the one shown in our picture!)
- The fruity extra: 30–40 g freeze-dried fruit from myfruits (we recommend: strawberry slices, whole raspberries, wild blueberries, or sour cherries)
- Optional crunch: A handful of nuts (pistachios or almonds) or a pinch of sea salt for a delicious contrast.
Step-by-step instructions
1. Melt the chocolate correctly
To give your chocolate bark a beautiful shine and a satisfying snap, you should temper the chocolate. Finely chop the chocolate and slowly melt two-thirds of it over a double boiler. Remove it from the heat and stir in the remaining one-third until everything is smooth.
2. Prepare the base
Line a baking tray with parchment paper. Pour the melted chocolate onto it and spread it evenly with a spatula (about 0.5 cm thick). If you use different types of chocolate, you can lightly swirl them together with a fork to create a marbled effect.
3. The topping: Time to add the fruit!
Before the chocolate sets, generously sprinkle your favorite freeze-dried fruits on top.
Tip: Gently press larger pieces, such as strawberry slices, into the chocolate so they stay firmly attached once it hardens.
4. Let it cool and break it into pieces
Allow the chocolate to set at room temperature for at least 2 hours (do not refrigerate it, otherwise it will lose its shine!). Once it has fully hardened, you can break it into rustic pieces.
Why freeze-dried fruit?
Unlike fresh fruit, freeze-dried fruit contains no moisture. This allows your chocolate bark to stay fresh for weeks while the fruit remains wonderfully crispy. The gentle freeze-drying process also preserves the full flavor and vitamins.
