Ingredients
3 ripe medium-sized bananas
120 g fine oat flakes
Soak 2 tablespoons of psyllium husks in 8 tablespoons of water
½ tsp baking powder
15 g cocoa powder
30 g chia seeds
1 tsp cinnamon

1. Soak chia seeds with 30 g of coconut blossom sugar in 150 ml of water.
2. Mash bananas with a fork until smooth.
3. Add the chia seeds to the banana puree and mix.
4. Mix the remaining 30 g of coconut blossom sugar, baking powder, cinnamon and cocoa powder until smooth.
5. Stir the chia-banana mixture into the psyllium mixture.
6. Add cocoa nibs, cranberries and oat flakes and mix everything again until you have a smooth dough.
7. Divide the batter among 12 muffin cups and bake at 170°C (top/bottom heat) for approximately 20-25 minutes. Use the toothpick test to check the baking progress.
